There is not one Armenian cuisine, but several. So that a dish can have one recipe and different versions from one country to another. Mom used to say: « Armenian cuisine is good, eaten quickly, but it takes a very long time to prepare! » I can still see her getting up at dawn to prepare vegetable dolmas, kechkek, boumbas, bamias or even a manti!

French writer Marcel Proust had a madeleine, but I was lucky enough to have several. As many as the 101 recipes in this book which remind me so much of my childhood: the subtle scent of orange blossom and nigella seeds when my grandmother made tcheureks for a regiment and spread out her braided buns on the bed ; the aromas of eggplant grilled in the oven, then stuffed with minced meat when mum cooked my favorite dish ; and finally, the fresh, herby scents of parsley, chopped mint and spring onions from my aunt Anaïs’ tabbouleh, when we were visiting her in Valence, a commune located in southeastern France, in the Drôme department.

Armenian cuisine is generous. With family or with guests, there is no service. No one gets up to retrieve a pot or a dish. The reason is simple, everything is already on the table: from mezzes to starters, main courses and desserts. When we receive three guests, we cook for six. Six, for twelve, etc. After the scents, images come to mind. Those of our gargantuan tables under the wisteria of our Marseille house in the Beaumont district: parents and grandparents, uncles, aunties, friends. No one was missing. We laughed, we drank, we ate until late, hearing the crackling embers of the giant barbecue on which the skewers of lamb and peppers sizzled. We started with a festive aperitif by devouring the mezzes: dolmas with vine leaves, boreks, basturma, soudjouk, kalamta olives, baba ganoush, hummus with the essential lavash bread. How could you be hungry after all this? It’s a great mystery, but who cares! We continued with the starters: grilled eggplant salad with new onions, tabbouleh, cucumber and tomato salad, chickpea salad, plaki, and zucchini fritters… Some would have fainted from indigestion. But we had to do justice to the main courses: bamias, rice pilaf, bulgur with green pepper, Armenian pizza, tchi kofta and the succulent midias, mussels stuffed with rice. In short, we then had to keep just a little room for slices of watermelon, baklavas or khourabiés at coffee time.

Armenian cuisine is also the result of a cultural heritage, the cradle of mutual exchanges of recipes and culinary traditions. This is the reason why a meze, a starter, a main course, a side dish, or a dessert can be common to Greek, Lebanese, Georgian, Russian gastronomy or simply from a region of the Caucasus. This is what gives it all its richness and diversity.

The 101 recipes in this cook book are not really difficult to make. Even if the « difficulty » tab sometimes indicates the mention « average » or even « technical ». For example, rolling a beautiful stuffed vine leaf, digging a boumba, shaping mantis, topigs, jingalov hats, matnakash or braiding a tcheurek. The more you repeat the gestures and the recipes, the more everything will seem easy and obvious to you. This is the long process of learning. You will be proud to impress your friends or family by preparing new and tasty dishes for them!

Almost all the ingredients needed to cook these emblematic dishes are available in regular shops (fresh fruits and vegetables, meats, legumes, dried fruits, aromatic herbs, cheeses, filo pastry, and pastry sheets). You will find the others in Armenian, Greek, Lebanese or Russian oriental grocery stores, such as vacuum-packed vine leaves, special spices (fenugreek, allspice, sumac, mahlep powder, nigella seeds), kataifi noodles and Yufka pastry, wheat oatmeal dzedzaz, kalamata olives, coarse, fine, or extra-fine bulgur, not to mention charcuterie (soudjouk and basturma), if you don’t have the courage to make it yourself. Many products can be purchased online on specialized shops. I will not take the risk of quoting them all for fear of forgetting some! But you can easily find them on the Internet.
Quiet! I have to leave you, I hear mom coming!
— Hi mom, shall we start this cookbook or what?
— I’m ready my little one, I’m just waiting for you. I promised you, and I got up on purpose at dawn! So, get to work!
— Is it true you’re going to explain everything to me in detail with your little secrets?
— I sure am!
— And I can taste it, take notes and photos?
— Thierry, you are talking too much! You’d better get me Aunt Anna’s cooking pot. Prepare the vegetables, minced meat, rice, herbs, and spices for me!
— And where do we start?
— By the easiest: the vine leaf dolmas. Go quickly and pick some leaves in the garden. Finely chop the onions for me, and then, as they say…
— So, that’s it, I have become your assistant then?
— Stop interrupting me constantly! What did I say?
