Il n\u2019existe pas une cuisine arm\u00e9nienne, mais plusieurs. Tant un plat peut avoir une recette et des versions diff\u00e9rentes d\u2019un pays \u00e0 un autre. Maman a coutume de dire : \u00ab\u202fla cuisine arm\u00e9nienne, c\u2019est bon, c\u2019est vite mang\u00e9, mais c\u2019est tr\u00e8s long \u00e0 pr\u00e9parer\u202f! \u00bb Je la revois encore se lever aux aurores pour nous pr\u00e9parer des dolmas aux l\u00e9gumes, un kechkek, des boumbas, des bamias ou enrore un manti !<\/p><\/p>\n\n\n\n<p class=\"has-medium-gray-color has-text-color\"><p class=\"justification\" style=\"text-align: justify; text-indent: 15px;\">Si Proust avait une madeleine, j\u2019ai eu la chance pour ma part d\u2019en avoir plusieurs. Autant que les 101 recettes de ce livre qui me rappellent tant mon enfance : le parfum subtil de la fleur d\u2019oranger et des graines de nigelle lorsque ma grand-m\u00e8re faisait des tcheureks pour un r\u00e9giment et qu\u2019elle \u00e9talait ses brioches tress\u00e9es sur le lit ; les effluves d\u2019aubergines grill\u00e9es au four, puis farcies \u00e0 la viande hach\u00e9e quand maman me cuisinait mon plat pr\u00e9f\u00e9r\u00e9 ; et enfin, les senteurs fra\u00eeches et herbac\u00e9es de persil, de menthe cisel\u00e9s et d\u2019oignons nouveaux du taboul\u00e9 de ma tante Ana\u00efs, lorsque nous lui rendions visite \u00e0 Valence.<\/p><\/p>\n\n\n\n<p class=\"has-medium-gray-color has-text-color\"><p class=\"justification\" style=\"text-align: justify; text-indent: 15px;\">La cuisine arm\u00e9nienne se veut g\u00e9n\u00e9reuse. En famille ou avec avec des invit\u00e9s, il n\u2019y a pas de service. Personne ne se l\u00e8ve pour r\u00e9cup\u00e9rer une marmite ou un plat. La raison est simple, tout est d\u00e9j\u00e0 sur la table : des m\u00e9zz\u00e9s aux entr\u00e9es, en passant par les plats principaux et les desserts. Lorsqu\u2019on re\u00e7oit trois convives, on cuisine pour six. Six, pour douze, etc. Apr\u00e8s les senteurs, il me vient \u00e0 l\u2019esprit les images. Celles de nos tabl\u00e9es gargantuesques sous les glycines de notre maison marseillaise \u00e0 Beaumont : les parents et grands parents, les tontons, les tatas, les amis. Personne ne manquait \u00e0 l\u2019appel. On riait, on buvait, on mangeait jusqu\u2019\u00e0 pas d\u2019heure en entendant cr\u00e9piter les braises du barbecue g\u00e9ant sur lesquelles s\u2019enflammaient les brochettes d\u2019agneau et de poivrons. Nous d\u00e9butions par un ap\u00e9ritif festif en d\u00e9vorant les m\u00e9zz\u00e9s : dolmas aux feuilles de vigne, beureks, basterma, soudjour, olives kalamta, baba ganoush, houmous avec l\u2019incontournable pain lavash. Comment avoir faim apr\u00e8s tout cela ? C\u2019est un grand myst\u00e8re mais qu\u2019importe ! Nous continuions avec les entr\u00e9es : salade d\u2019aubergines grill\u00e9es aux oignons nouveaux, taboul\u00e9, salade de concombres et de tomates, salade de pois-chiches, plaki, et beignets de courgettes\u2026 Certains se seraient \u00e9vanouis d\u2019indigestion. Mais il fallait bien faire honneur aux plats de r\u00e9sistance : bamias, riz pilaf, boulgour au poivron vert, pizza arm\u00e9nienne, tchi keuft\u00e9s et les succulentes midias, moules farcies au riz. Bref, nous devions ensuite garder juste un peu de place pour les tranches de past\u00e8ques, les baklavas ou les khourabi\u00e9s \u00e0 l\u2019heure du caf\u00e9.<\/p><\/p>\n\n\n\n<p class=\"has-medium-gray-color has-text-color\"><p class=\"justification\" style=\"text-align: justify; text-indent: 15px;\">La cuisine arm\u00e9nienne est aussi le fruit d\u2019un h\u00e9ritage culturel, berceau d\u2019\u00e9changes r\u00e9ciproques de recettes et de traditions culinaires. C\u2019est la raison pour laquelle, un mezz\u00e9, une entr\u00e9e, un plat, un accompagnement ou un dessert peuvent \u00eatre communs \u00e0 la gastronomie grecque, libanaise, g\u00e9orgienne, russe ou tout simplement d\u2019une r\u00e9gion du Caucase.
